The Columbia Valley Cabernet Sauvignon is a marriage of the 3 main growing regions from which we source Cab grapes: Echo (soon to be) AVA, Walla Walla AVA and Yakima AVA. This combination of Cab sources from 2014 proved to be a winner in our blending trials, bringing the best features of each region into this cuvee blend. With a little addition of Petit Verdot, we achieved a balanced, powerful example of what Columbia Valley Cabernets can offer. We expect this wine to continue to improve for at least 3-5 years in cellar and is expected to age well for 10+ years.
The grapes were crushed, destemmed and divided into small lots for fermentation, each receiving a unique yeast strain inoculation to enhance complexity of the finished wine. Following alcoholic fermentation, malolactic fermentation was induced and the wine musts were allowed an extended maceration of ~4 weeks. The wines were then lightly pressed in ~half ton lots, settled and then moved to barrels. The resulting wine was blended together and aged in 2 new American, 1 once-used American, 2 once-used French barrels.
The wine was racked several times during aging which produced a natural clarification. The small scale production methods used to make this wine included: hand sorting of grapes, small fermentation and press batches allowing for individualized wine making decisions per batch and manual approaches to nearly every step in the process including bottling and labeling.
